Roast Butternut pumpkin
INGREDIENTS
1 butternut pumpkin
100g butter
METHOD
Preheat oven to 120°C (or 100°C fan forced).
Slice the pumpkin in half, remove seeds and score. Place in an oven dish.
Place butter in the cavity where the seeds were and cook, basting occasionally, for 4-6 hours or until meltingly soft.
